WILD VENISON FEAST – NATURE ON THE TAVOLATA

To start, a potpourri of flavors served as a cocktail. Followed by: venison in all its diversity – served as a 3-course tavolata, rustic, hearty, surprising.

 

From 6 p.m.:


Starter:

Marmot pâté with pickled pumpkin, Cumberland sauce, and rolled Lollo Rosso lettuce

or

Vegetable terrine with pickled pumpkin, Cumberland sauce, and rolled Lollo Rosso lettuce

 

Main course:

Wild game sausage, blood & liver sausage, bacon, tongue, tail

Dried beans, sauerkraut, bouillon potatoes, braised onions, lemon

Condiments: Mustard, mustard fruits, fresh horseradish, ketchup, chives

 

Dessert:

Warm chocolate cake, hay milk ice cream, berry ragout
