In Austria and Switzerland hunting is a big part of Culture, as is Wine. Switzerland has been inspired by the French and because of the growing interest in wine the Swiss have developed their own perfected vineyards and wineries. Whereas in Austria the Winescandal in 1985, when wine mixed with Glycol was sold, led to the world’s strictest wine-growing law. The quality efforts of the winemakers has really changed the wine market in Austria and in combination with the climate change, the wines from Austria impress with their personality and expression.
8 wines from the central growing areas Wachau, Traisental, Burgenland and south Styria represent the new self-image of viticulture in Austria with their independent character. For this prupose we combine venison dishes that show the diversity of helminian venison species and are thematically matched to the wines.
